Lemon (Citrus limon L. Osbeck) is an evergreen tree native to Asia, and widely grown in subtropical areas. It is cultivated in many countries, and Mexico is the biggest producer followed by Argentine, Spain, and USA. Lemon fruits have sour taste with high content of citric acid, and its juice, rind, and peel are widely used in beverage and food. They are used to make lemon liquor, lemon curd, marmalade, lemonade, pies, and cookies. Drinking lemon tea is a well-known treatment for common colds due to its high vitamin C content. Lemon has numerous therapeutic properties such as preventing diabetes, kidney stones, and cancer, improving digestion, and lowering fever and blood pressure. Lemon juice is also used for hair and skin care to treat acne, eczema, and dandruff.

 

Lemon contains various active compounds. Citric acid is the most representative organic acid, and flavanones are the most abundant flavonoids in lemon. Hesperidin and eriocitrin are mainly from lemon juice, while neoeriocitrin, neohesperidin, and naringin are from peel. Rutin and myrelcetin are the most abundant flavonols in lemon juice, while quercetin and kaempferol are both in juice and peel. Lemon is also a rich source of carotenoids, β-cryptoxanthin as a principal carotenoid. Due to those bioactive compounds, lemon shows various effects such as anti-oxidant, skin brightening, and anti-microbial activities.
