Theobroma cacao is an evergreen tree native to tropical regions of Central and South America. It is commonly called cacao or cocoa tree. The genus name Theobroma originated from Greek, meaning food for the Gods and the species name cacao was used by the Maya and Aztec.The largest cacao production is coming from Ivory Coast followed by Ghana, Indonesia, and South American countries.

 

All parts of cacao fruit are used as a food ingredient, and especially, the dried fermented cacao seed is the key ingredient for making chocolate. Nowadays, raw and artisanal chocolate with high levels of cacao are gaining popularity. The cacao fruit contains abundant polyphenols that demonstrate various beneficial activities, such as anti-cancer, anti-fatigue, and anti-oxidant actions.

 

Research on the constituents in cacao focuses on the polyphenols and procyanidins, including epicatechin which makes up about 35% of the total polyphenol content of cacao. As well as the anti-oxidant activities obtained due to the high levels of polyphenols, the anti-inflammatory effects of cocoa extract and its flavonoids have been investigated, which down-regulated inflammatory cytokines in a dose- dependent manner and significantly decreased NO secretion in macrophages.
