Grifola frondosa is an edible mushroom which grows in clusters at the base of trees, particularly oaks. In English, it is commonly called as hen of the woods, ram’s head, and sheep’s head, and in Japan, it is known as maitake, meaning dancing mushroom. G. frondosa has been used as traditional medicinal mushroom in East Asia, especially in China and Japan, as an aid to balance out altered body systems to a normal level. G. frondosa is rich in minerals (such as potassium, calcium, magnesium, and selenium), various vitamins (B2, D2 and niacin), fibers, amino acids, and polysaccharides, such as α- and β-glucans.
