Bird’s nest, also known as the swiftlet nest, is created by the swiftlets using solidified saliva, glutinous strands of starch-like saliva produced by a pair of large salivary glands under their tongue. After being collected, it’s sterilized and consumed as a luxurious soup, especially in Asian countries. It’s particularly prized in China due to its rarity, supposedly high nutritional value, and flavor, believing it promotes good health, especially for the skin.
