The sturgeon is the largest freshwater fish made up of cartilage instead of bones and is the only surviving fish that emerged between 100 million and 135 million years ago. As an anadromous fish, it climbs up the river to spawn, scattering in the river`s upper reaches, and the alevins go back to the sea and stay until it grows to mature. They spawn roe named caviar only a few times in their lifetime. Therefore, an artificial hatching system has been developed, and commercial caviar production has become possible. Caviar comprises protein, fat, glucose, vitamins, and minerals. They have been reported as perfect nutritional food with low calories and high protein content.
