Sambucus nigra is a shrubby tree with aromatic white inflorescences that give way to blackberries. Commonly known as an elder or black elder, it is a familiar sight in hedgerows and wasteground throughout northern temperate regions. Elderflowers and berries have a long history of use in herbal medicine. The flowers are used in colds and fevers and for sinus conditions. The berries are well-researched and used as syrups for chest infections and viruses. They also can be made into jams and jellies.
S. nigra is a good source of protein, free and conjugated forms of amino acids, unsaturated fatty acids, fibers, vitamins, antioxidants, and minerals. Fruit extract of S. nigra has been reported to have the ability to protect human colon cells against oxidative stress, DNA damage, and mutagenicity.
