Spray-drying is a process of transforming liquid extract to dry powder by sprinkling the fluids into a chamber with a heated gas. The liquids are scattered through a spray nozzle and micronized into drops, and then they are immediately vaporized by hot gas.
Compared to other drying methods, spray-drying has several merits, such as,
