Freeze-drying is used to make a powder from the extract. Under certain pressure and temperature, the solvent of frozen concentrate is converted to a gaseous state so that only the dry residue remains. As the temperature is kept very low throughout the process, the active ingredient can keep its own characteristics from thermal effects.
